Egg Quiche

You asked for meals, so I’m bringing you meals! I plan to share a recipe once a week, but of course, feel free to continue to follow me on IG story to see what I feed Vivienne daily. This will also help me continue to get creative in the kitchen.

I dont know about you, but Vivienne goes through phases of liking certain foods. Some days she is all about blueberries and the next, she prefers eating the pickles on her plate instead. She didn’t get pickle loving from me. Anyway, I have to at times find creative ways to cook Vivienne’s food as I naturally cook more bland… and let’s be real… kid’s don’t like bland.

The breakfast below is a personal favorite to make, as it always leaves you with leftovers and a happy baby. This was the only way I used to be able to get Vivienne to eat eggs. Now, it’s more about sneaking in those veggies. Phases, people! Of course, feel free to mix in whatever you have in your refrigerator. Mushrooms, onion, potatoes, asparagus, bell peppers, etc. etc. to create your ideal breakfast.

 

Ingredients: I dont have specific quantities as I just kind of chop up a little bit of each and add it together. Eye ball it!

2 Eggs, Scrambled
Parmesan Cheese or whatever cheese you have, grated.
Tomato
Onion
Broccoli
Pancetta
Spinach

How to:

Gather your ingredients, chop them up, and add the onion, broccoli (easier if already cooked/steamed), and pancetta to a pan. Let cook for about a minute or two and then add the tomato and spinach to the pan. Let those welt down and cook for about a minute.

Take your mini loaf baking pan, spray it with cooking spray (or grease it with butter or oil), and add the cooked veggies. Pour in your scrambled eggs and top it off with cheese.

Place place in the oven at 350 degrees. Cook for about 10 minutes but continue to check. Again, I haven’t perfected the exact time but just continued to take it out and giggle it to make sure the eggs are cooked.

Once it is finished, take out the pan and let it sit for a few minutes. Turn it upside down and slice according to your preference. You can also cut in cubes.
