Hey guys! Per your request, I have added another simple recipe to the blog for your family’s convenience. I did this recipe last week using a crockpot and literally 4 ingredients (5 since I added quinoa to my bowl and rice to Vivienne’s after it was cooked). Ingredients
- Chicken breast
- Cashew Pesto by Trader Joes
- Bruschetta Sauce by Trader Joes
- Cauliflower Rice (via Trader Joes)
- Optional: Brown Rice or Quinoa
- Salt and Pepper to taste
Instructions
As a warning, I’ve been known to not measure ingredients… I just eyeball it and hope for the best and learn for next time. I added the chicken breasts to the bottom of the pot, pouring the entire bruschetta sauce on top as well as half of the pesto. I had about half the bag of cauliflower rice and salt and pepper to taste. Cook on low for about 5-6 hours. Cut one of the larger chicken breasts to make it is juicy and cooked through. When it is done, turn the crockpot to WARM until you are ready to eat, the last thing you want is to keep it on low and overcook it all.
