Costco Inspired Stuffed Bell Peppers

Ingredients

Olive Oil
4 mini zucchini, sliced thin
1/2 cup diced onion
2 garlic cloves
1/2 pound of ground beef or turkey meat
1/2 to 3/4 marinara sauce
Parmesan Cheese
Bag of Heavenly Village Marzano Tomatoes from Trader Joes, sliced in half
salt and pepper to taste

*I forgot to add the brown rice to this recipe. That’s how I normally make it and I had major mom brain today recreating this recipe. 1 package of brown rice from Trader Joes is mixed in.

Please note that I am not much of a follow the ingredients person, especially as there are many dishes that I have recreated or winged.

Instructions

Add olive oil to a skillet, include the onion, garlic, and tomatoes to the pan and cook for about 3-5 minutes. Add the turkey meat and cook until completely brown. Stir in some parmesan cheese. I had a lot of liquid in the pan from juices from the meat so I drained the liquid before adding the marinara sauce. Mix in some more cheese and continue to mix. This is where I would have added the cooked brown rice. Add even more parmesan cheese and mix in before adding it to a baking pan. Bake on 350 degrees for about 10 minutes. You can skip this step if you are running out of time. Vivienne doesn’t eat peppers either, but I made two tonight for JJ and I. Adding the mixture into a pepper and cooking it for 10 minutes in the oven on 350 degrees.
