Paleo Slow Cooker Chicken Enchilada Soup

After a long night out celebrating Halloween on Friday evening, we took it easy for the rest of the weekend. Which was exactly what I needed. JJ and I dressed as the modern day Romeo and Juliet, aka Leo and Claire. A costume I had been wanting to do since the movie came out. I just never found someone willing to play the part with me. C’est la vie!

Sunday was the perfect day. Our new back doors were left wide open in the morning while coffee was consumed, football was watched and puppies sprinted in and out of the house. The temperature stayed at a cool 76 degrees throughout the day, where we eventually felt obligated to put our fireplace to good use in the afternoon. This lazy day got even lazier when we decided to put our crockpot to work. I opened up Pinterest, typed in “crockpot recipes” and allowed my husband to pick the recipe of the night. He went with this Chicken Enchilada Soup, which was actually a really healthy choice (thank goodness) and simple to put together.

Ingredients
1 1/2 lbs. boneless skinless chicken breasts
1 medium yellow onion, diced
1 bell pepper, thinly sliced
1 jalapeno, diced
2 cloves garlic, minced
1 15-oz. can diced tomatoes
2 cups chicken stock
1 tbsp chili powder
1 tbsp cumin
1 tsp dried oregano
1/2 tsp paprika
Salt and freshly ground pepper, to taste
2 tbsp fresh cilantro, chopped
1 avocado, pitted and sliced
