Gluten-Free Mexican Bowl

We “won” these tortilla bowl makers from a white elephant exchange during Christmas and are finally putting them to good use! The other night I used the rest of our shrimp to make a fresh gluten-free Mexican bowl for dinner. Although this dinner was only for JJ and I, these tortilla bowls could be a good way to entertain guests. I did not measure the ingredients for this meal, any amount of these fresh ingredients will work great together.
Ingredients
2 Gluten-Free plain tortillas
Quinoa 
Ripped lettuce, iceburg 
avocado, cut in cubes
red onion, chopped small
tomato, cut in cubes
red bell peppers, chopped
 Cucumber, cut in cubes
Directions
Turn oven to 375, take your tortilla bowl maker (can find similar here) and spray lightly with cooking spray. Take your gluten-free tortilla and gently place in the bowl makers. Put in the oven for about 12 minutes or until crisp, watch closely so they do not burn. Mix together all the ingredients in a small bowl. Once the bowl are done cooking, let them cool for a minute before taking them out of the pans. Add your ingredients to the tortilla bowl and garnish with a lemon slice or favorite topping.
