Ingredients:
2 eggs
1/4 tsp butter
1/2 cup chopped Kale
1/4 cup chopped onion
teaspoon of parsley
2 brown mushrooms, chopped
small amounts of sliced potato, your preference
Onion Powder, sprinkle
Salt and pepper to taste
Avocado

Directions:
Add butter to small skillet and once slightly melted add the onion, potato, and mushroom. Add salt, pepper and sprinkle of onion powder. Cook for about a minute before adding the kale, stir occasionally. Once kale leaves are welted, add two eggs in the middle. Sprinkle parsley on top and cover for about 3 minutes or until egg is cooked to your liking. Add to plate and garnish with avocado, salt and pepper.
