Italian Egg Bake

As you may already assume, I am a big fan of breakfast. I think it is the most important meal of the day and in my opinion, the most appealing. Today I made my typical egg bake, inspired by some of the Italian ingredients in my fridge.

2 Eggs
1 slice of tomato
Handful of chopped onion
Handful of chopped white mushroom
Fresh Basil
Goat cheese, small amount
Salt and Pepper

In a small skillet, add butter/oil to your pan and add the onion, mushrooms, and some sliced up basil. Sprinkle the ingredients with salt and pepper and cook until onions are translucent.  Add the tomato to the skillet and continue to cook, turning it over once more to cook well on the other side. Lightly crack and drop in two eggs to the skillet. Place three or however many basil along with the prosciutto and goat cheese to the egg bake and cover with a pan lid. Top the bake with more pepper and salt to your liking.
