A few weeks ago, I attempted to make my own spring rolls from a recipe found off pinterest by Nature Box. My first attempt at putting the delicate rolls together was a bit frumpy at first, but after practicing a few times; I was able to pull off a decent batch of shrimp quinoa spring rolls. They are delicious! So delicious, I spent every morning for the next week making veggie spring rolls for a snack at work. A tad obsessive, I know. Yet so worth it! I also made the clean peanut sauce to go along with it, yet, low sodium soy sauce is a great alternative for a simple meal prep.
