A few people have asked for the recipe after I posted the replica clean peanut butter cup on Instagram a few days ago. For those of you looking for something that will taste exactly like the milk chocolate peanut butter cup, sorry.. move on because you may be disappointed. This is a CLEAN peanut butter cup. No preservatives, all natural… but yes, it does taste like dark chocolate and peanut butter. The bottom couldn’t be more perfect, yet the top is pretty chocolatey. If you are looking to not eat clean, but eat healthier… substitute the top layer with melted dark chocolate to freeze instead.
Recipe
Bottom Layer
2 tablespoons melted coconut oil
4 tablespoons natural smooth peanut butter
1/2 teaspoon stevia (optional)
Top Layer
2 tablespoons melted coconut oil
4 tablespoons natural peanut butter
1/4 cup cocoa powder
1/2 teaspoon stevia (optional)
Directions
Stir all ingredients together until smooth. Arrange 10-12 mini cupcake trays in a muffin pan and add half the bottom mixture into each. Place the tray in the freezer for about 10 minutes. Stir the bottom layer ingredients together and add mixture to the mini trays. Freeze for at least 15 minutes. I keep these in the freezer and take one out when I want one after dinner. I also added a few dark chocolate nibs to a few of them to test out, yum 🙂
