Simple Pesto

I’ve been known to take my time cooking a good meal after work, and going through a lot of dishes in the process (a battle my husband and I have… it is what it is). Yet some days during the work week all you want to look forward to is the couch, a good show, and a simple meal.

Here is your simple meal.

Ingredients
quinoa pasta noodles
homemade pesto (this recipe here)
fresh parmesan cheese
cherry tomatoes, cut in halves

Process
Start by boiling a pot of water and in the mean time, get your pesto together. Add 2 cups of fresh basil, 1/2 cup parmesan cheese, 1/2 extra virgin olive oil, 1/3 cup pine nuts, 3 garlic cloves, and fresh pepper to taste into your food processor. Mix well until your pine nuts and garlic cloves are chopped extra small. Add your noodles into the boiling water and cook al dente. Add the pesto on the stove in a skillet with the pasta noodles. Always combine the pasta in the sauce before serving. This will make sure the sauce soak in well for an even better taste. If you need to thin out the sauce, add some pasta water. Garnish the dish with parmesan, tomatoes and a basil leaf.
