I’m breaking my silence.

Hello Stranger! I’ve decided to get back into the world of blogging. My last post has an embarrassing date of November 2013 and all I have to say is… wow these past 6 months sure flew by. Some of you may already know me well through social media or in real life to know what I’ve been up to, but I’ll brief you.
In January 2014, JJ and I purchased our very first home. I couldn’t be more excited to not only have a home of our own but to not longer be wasting our money living in apartments.
Around the same time we purchased our home I became SWAMPED at the office; while adding three, now four part- time social media gigs in the mix. We currently have 2 weddings under our belt, with 5 vastly approaching. Consider this our busiest year yet, especially in the wedding department.
This past month, JJ and I not only adopted our second rescue, King, but we decided to take in a foster puppy to help find her a forever home. This is one of the most rewarding things I’ve ever done. Maggie currently has two parties interested and should be adopted this weekend. We will miss her.

Where’s the food?
If you’re wondering where all the foodie Instagram pictures went which often inspired my blog posts.. don’t worry, I didn’t stop eating. But I did make a change for a solid 10 weeks from clean eating to a program called, Body Change. These meals were not so much Instagram worthy… unless it was a load day!
JJ and I have decided since this past Monday to get back on the meal plan, but without self-deprecation when we make a mistake or three. I feel it is healthy to have a balance when attempting to eat healthy all the time. If you don’t, you will do what I did last month and binge myself back on the Body Change program. Moderation Lola, Moderation.

To kick off the beginning of the week right, I whipped up a delicious breakfast.

Shrimp + Avocado Scramble

Ingredients-
3 pieces of shrimp, washed and detailed
1/2 avocado, sliced thin
3 eggs, scrambled
1 tablespoon of chopped parsley
1 teaspoon of olive oil or oil of choice
salt and pepper to taste

How to-
Add the olive oil and shrimp to a skillet on medium heat, add the salt and pepper to the shrimp. Let the shrimp warm up for 30 seconds and stir parsley in. Pre scramble the eggs in a small bowl and add to the pan. Stir with spatula until eggs are fully cooked. Add the mixture to a plate and top the eggs off with the avocado and additional pepper/salt to your liking. Enjoy!
