Sweet Potato Muffins

Alright, let’s get straight to the point. I’ve been MIA. Please don’t take it personal, I’ve had a lot going on these past few weeks. Not only have I gained a few side projects on top of my 9-5 work week but my time has been consumed with searching the internet. JJ and I are soo very excited for this next step… purchasing a home! It’s not an easy process and there is so much to learn but we are ready to take it on!
So… to leave you on a good note and to make up for my absense… Sweet Potato Muffins below!
These thick, savory, and fluffy treats are so delicious; made with natural ingredients that will keep you feeling full and satisfied!
 
Ingredients
1 large sweet potato

125ml extra virgin olive oil
125ml unsweetened almond milk
175ml good-quality maple syrup or xylitol, plus 2 extra tablespoons for brushing the muffins
1 tsp pure vanilla extract
270g gluten-free flour (if the flour doesn’t include xanthan gum, add 1 tsp)
2 tsp baking powder
2 tsp baking soda
1½ tbsp chinese five-spice
½ tsp fine sea salt
