Mozzarella, Tomato and Basil Cauliflower Crust Pizza

The moment I found out you could make a pizza crust by using cauliflower and a few other healthy ingredients; you better believe they instantly hit my grocery list. I am not going to lie- I made this on Friday night and while following this recipe; the crust stuck to the pizza stone and the “dough” was ruined. A loud UGH came from my kitchen as I attempted to lightly peel the crust away. A complete fail- and I HATE fails. Yet, you live you and learn. Thank goodness for my husband who instantly yells out, “lets go for sushi.”
A quick grocery trip the next morning led to round 2 for Sunday night’s dinner.
Tip: Regardless of what the recipe calls for, especially when making something for the first time that involves ingredients you may not have worked with before… use parchment paper. It makes the baking process a whole lot easier in general.

The second time around, the pizza came out great! Round 3 will involve cooking the “dough” longer to make sure the crust comes out more crispy in the center.
A must try for those of you looking to eat healthy and still enjoy pizza!

Ingredients
Cauliflower pizza crust, recipe here.
Part-skim mozzarella cheese
All-natural pizza sauce
Roma tomato, sliced
Fresh Basil Leaves
Jalapeno, sliced

Directions

Make the cauliflower crust per instructions given above. Once the crust is out of the oven, add the pizza sauce, mozzarella cheese, tomato slices, chopped jalapeno and top with fresh basil leaves. You can make the pizza with any desired topping, just make sure they are not too heavy. Cook in the oven at 400 degrees for an additional 5 minutes or until the cheese has melted. Cook the toppings ahead of time if preferred cooked ingredients.
