Breakfast is definitely my favorite meal of the day. I personally do not understand people who choose not to have it on a daily basis. How do you get your day going? Although coffee and a bagel work fine for most, I like to find new and interesting recipes to try at home before work and on the weekends.
This recipe jumped out at me while searching pinterest. I had to have it immediately. You can decide if you’d like to have it for breakfast, lunch, or dinner. My kind of meal.
2 whole wheat pitas
salt and pepper
2 large basil leaves, rolled and sliced
3 pieces of salami, cut in triangles
2 eggs, cooked sunny side up
Preheat the oven to 350 degrees. Add the 3 slices of salami to a pan and set in oven for about 5 or so minutes, watch carefully so they do not burn. While the salami is cooking, add the pitas to the oven as well to toast. Smash 1/2 an avocado (I chopped them up and used a spoon on a plate to make the spread). Spread avocado over the pitas, add salt, pepper, lemon juice and chopped basil leaves on top. Top the pita off with the egg, pieces of salami and additional pepper to taste. Serve warm.
