Salmon Skewers with feta, tomato and couscous
Last night’s dinner was inspired by this recipe, by My Cozy Apron.
The only part of the recipe that I did follow was the dill sauce, which complimented this dish nicely. The perfect dip to combine the fish, couscous, tomatoes and feta.
I made couscous instead of quinoa and pin nuts, and added red peppers to the skewers.
