Spicy Hot Tomato Oil on Spaghetti Squash with Italian Sausage

Last week was the first time I had ever made and/or even had spaghetti squash. I saw a few recipes on Pinterest and became intrigued to try squash as a new substitute for pasta noodles. Now, don’t get me wrong… I LOVE pasta, but who doesn’t love a healthier option? You still get the comfort of having a hearty meal without consuming a lot of carbs. I found this recipe helpful, which taught me how to cook the squash.
I also had quite a craving for the Spicy Hot Tomato Oil from pastabilities, a restaurant back home in Syracuse, NY. It is the best oil I have ever had. Classically used to dip bread, but being that good; you will request to have it on your pasta as well. I found this recipe from a guy that attempted to recreate the sauce from scratch. Although he had included barely any specific measurements, I was able to use his ingredients and guesstimate along the way. The sauce came out delicious!! Like the sauce from pastabilities as I remember it, but JJ thinks even better. I included sauteed hot Italian sausage with a touch of Parmesan cheese sprinkled on top, a perfect combination!
