Seared Tuna with Toasted Pine Nuts and Arugula

Last Monday, I was in the mood for creating a simple, healthy dish for two.
 I browsed Skinny Taste for inspiration, my recent go-to food blog and found this recipe. What I love about Skinny Taste is the small amount of ingredients used, calorie count for those looking to lose weight and just an all around healthier choice. While working with the recipe, I added toasted pine nuts and stuck to my handmade lemon vinaigrette for a dressing. Also whipping together a quick appetizer from the large tuna steak, I made tuna tartare with the ingredients in my kitchen, but inspired by this recipe.
Appetizer
Ingredients
Chopped fresh tuna steak
sliced cucumber 
salt and pepper
sesame seeds
Directions
As simple as it looks. Sliced cucumber topped with salt and pepper, adding the tuna and sesame seeds. 
Salad 
 Ingredients
Tuna Steak (We bought ours from Costco)
avocado
arugula
pine nuts, toasted

Dressing
olive oil
salt and pepper
fresh lemon juice
balsamic vinegar

 Directions
Add the tuna steak to a grill, cook for only about a minute to minute and 1/2 on each side, just to sear. Cut into large slices and add on top of arugula, pine nuts and avocado. I put the pine nuts on a tray into the oven at 350 degrees for about 5 minutes to toast.  Add the dressing and additional fresh lemon juice for flavor.
