Blueberry Banana Pancakes.
A simple and easy recipe made a delicious morning. And if pancakes aren’t filling enough, add bacon and a toasted baguette with jelly on the side… cause I sure did.
Did I happen to commit carbicide AND get into a bikini in the same day? …. maybe.
My mother has been going to a small store called The Wooden Indian in Rehoboth Beach for jelly for as long as I can remember. She often sticks a few in my carry on’s which is a nice memory of home and family vacations. I added some raspberry jelly to our baguettes because our breakfast clearly did not have enough carbs.
Olive oil or cooking spray
3/4 cup of Milk
1 tablespoon of vegetable oil
1 banana, sliced in small pieces
Blueberries, as many as you’d like to add to the mix
Place a skillet on medium heat, adding cooking spray or a light amount of olive oil to the pan. Mix pancake batter as directed on the box. After the batter is ready, add the bananas and mix with a wooden spoon or baking spatula. Add as much batter as you’d like to the pan (depending on how big you want your pancakes) add about 5 or so blueberries to the flat batter as they cook. Flip twice and your done. Continue until the batter is finished. Simple! Simple!
