Cooked Crab, Garlic and Herb Mashed Potatoes, Corn, and Garlic Bread

Arriving back from vacation is difficult. You have so much to do (unpacking, laundry, grocery shopping, cleaning, etc.) yet you would rather just huddle on the couch and be lazy. Yesterday was one of those days where I kept going in and out of being productive and laziness. 
While cooking dinner last night, I decided to upgrade serving plain bread with garlic bread {productive}
…. and being frustrated with how long potatoes boil for, I made them have more of a baked texture than mashed {laziness}
All in all… it turned out well. No complaints from the husband.
We bought him already cooked, so all you need to do is boil water and let crab cook for 15 minutes.

Mashed Potatoes
Recipe I previously went with, here, although I did add parsley and oregano to the end result.

Garlic Bread

I used Rachel Ray’s recipe because it was one I found that already had all the ingredients for.
4 cloves garlic, crushed
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 loaf crusty bread, split
3 tablespoons grated cheese, Parmigiano or Romano, optional
Chopped fresh parsley
Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat garlic and butter and oil in microwave for 1 minute or in a small pot over moderate-low heat for 3 minutes.

Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if using, and parsley. If you added cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.
