Rack of Lamb, Garlic Cream Mashed Potatoes and Crab Cakes

This past weekend was relatively relaxing and I spent most of my time with my Lucy.
Although Saturday I did go out to celebrate two of my good friend’s birthdays in the city.
Appetizers, Drinks, and The Brixton.
During the day, I walked around the Marina for a bit and stopped into this adorable bakery for dogs.
I of course had to pick up something for Lucy.

JJ came back on Sunday from visiting the family in Brawley to a cooked meal and a happy pup. JJ’s sisters picked her up this adorable red sweater and necklace that she clearly loved.
Rack of Lamb with Rosemary and Garlic
I picked up the rack of lamb and crab cakes from a store in the Marina called, Marina Meats. Really great meats, yet a little pricey. We have only gone here one other time, but I had a specific menu in mind for JJ’s return.
Ingredients

4 large garlic cloves, crushed
1 cup of  fresh rosemary, loosely fit
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 (7 bone) rack of lamb, trimmed and frenched
Directions
Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position. In a large bowl, combine garlic, rosemary, salt and pepper. Add olive oil to the lamb and the herb mixture.
Set aside for an hour, or up to 4 hours.
Put olive oil in roasting pan, put in oven for 10 minutes. Add the lamb after and cook for 25 minutes. Take out and let cool for 10 minutes before cutting and serving.
Creamy Garlic Mashed Potatoes
Ingredients
3 1/2 pounds russet potatoes

2 tablespoons kosher salt

16 fluid ounces (2 cups) half-and-half
6 gloves of garlic, crushed
6 ounces grated Parmesan

Directions

Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.
